1/8 l milk
60 g finely milled spelt or wheat flour
2 eggs
1/8 t salt
1/2 pinch of cinnamon
1 South Tyrolean apple (Golden Delicious)
1 T chopped walnuts, toasted
1/2 t sugar
1/2 t butter
1/2 T raisins or sultanas
Oil for frying
Powdered sugar for dusting

How to make an apple-walnut pancake
Preparation
Whisk the milk, flour, salt and sugar until smooth; add the rinsed and dried raisins to the mix. Gently fold in the eggs. Peel and slice the apples. Brown 1 tablespoon of sugar in a pan, add the butter and cook the apples in the mixture for about 5 minutes or until soft. Dust with cinnamon. Pour a quarter of the hot pan with oil. Cover and cook for a short time, then turn and cook on the other side until done. Pluck the pancake into pieces with a fork. Repeat the procedure four times a total of 4 servings. Arrange with the cooked apples on a plate, dust with powdered sugar and serve.
